Butternut Squash!

I give full credit for this to Tammy. When she did her pumpkins and posted about it I walked out into the kitchen saw my little mountain of butternut squash and that light bulb came on above my head!


I did have a wonderful picture of the squash in the roaster but I deleted it by accident. :( So you only get the one showing my little pile.

We love squash and our butternut vines did great this year. This is the first time I think I have grown them and we were happy with what we got. Next we will plant more since it turned out so well.


I washed and cut up the squash and placed them in a big counter top turkey roaster with about a quart of water in the bottom. Turned it on to 350 and went about my day. They started smelling really good in about an hour and about 30 minutes after that they were completely done! I let them cool and scooped out the good part and froze it in meal size containers!


This is going to be a yearly thing it was so much easier that in the oven! They didn't dry out on top like they do when cooking in the oven even when I do what my mom did and put butter on them. I would like to try this with acorn squash and spagetti squash as well.
