Kitchen Tip Tuesday

I found this recipe in the Hopkins’ Healthy Home Cooking cookbook I bought a couple of years ago. I wanted gravy a couple weeks back for a pork roast and the ones I have made Yguy doesn’t like and I wanted something made completely from scratch and this one fits the bill perfect. And Mr. Picky AKA my son loves it!

No added chemicals you get from package stuff and it is made with whole-wheat flour. I am sure you can use white flour or even a gluten free flour substitute.

“Straw into Gold” Gravy

The creator’s son doesn’t like onions or mushrooms and he says this gravy is like taking straw and spinning it into gold.

1 onion sliced
5 fresh mushrooms sliced
2 T olive oil
1/3 c whole-wheat flour (or a thickener you would like)
1 tsp Worcestershire sauce
Salt and pepper
I added 2 cloves garlic

Sauté onion, mushrooms, and garlic. When they are tender put them in the blender add enough water or potato water to total 3 cups. Add flour and Worcestershire sauce blend briefly until all the blended into a smooth gravy. Return to pan and cook over low heat till thick and bubbly. Add salt and pepper to taste.

Tonight I left out mushroom since I don’t have any. I put a roast in the pan added cut up carrots and poured gravy over it and now it is cooking in the oven. Works great in the crock pot as well.
